It all started with a spark, and a whole lot of smoke.

More than 30 years ago, Theo learned the art of real BBQ from his son’s grandfather. What began as lessons in fire, flavor, and patience soon revealed a natural gift. After years of not utilizing that gift, in 2010, Theo decided it was time to use it and Nomad’s BBQ was born.

He started small, setting up at softball tournaments and late-night spots in downtown Albuquerque, where locals couldn’t resist the smell of slow-smoked turkey legs drifting through the night air. Word spread fast, and soon Nomad’s BBQ became a familiar sight at events across New Mexico.

From local brewarys and festivals to the legendary Pork & Brew, where Theo proudly took home the Mayor’s Choice Award, the journey has been fueled by one simple truth: good BBQ brings people together.

Today, you can find Nomad’s BBQ serving up smokey perfection inside the Revel Entertainment Center, offering dine-in, delivery, and catering. Whether it’s a private celebration, corporate event, or community festival, Theo and his crew deliver bold flavor with speed, precision, and heart.

Behind the grill is a creative team that’s no stranger to the spotlight, they’ve been featured in multiple films and television series, bringing the same energy and flavor that made them a New Mexico favorite.
